Every winter, St Barts demonstrates a distinct talent for attracting global dining concepts. The 2026-2027 season is no exception, with five established names joining or returning to the island. While these arrivals expand the high-end dining options available to visitors, they also reflect a broader trend: the growing alignment of luxury destinations worldwide around a familiar roster of brands.

Here is an objective breakdown of what to expect from these five new tables.

1. Zuma St Barts (Gustavia)

Opening: November 25, 2026

The contemporary Japanese izakaya brand — well established in London, Dubai, Miami, and Hong Kong — opens its doors in the heart of Gustavia overlooking the harbor.

  • The Venue: An intimate indoor dining area combined with a semi-outdoor waterfront space featuring high-top seating. The layout is designed to transition smoothly from sunset drinks to dinner and late-night gatherings.
  • The Menu: Driven by three distinct kitchens — main kitchen, sushi counter, and robata grill — offering shared dishes paired with a selection of craft cocktails, fine wines, and premium sake.
  • The Vibe: Open 7 days a week from 6:00 PM to 1:00 AM, with a resident DJ positioned at the central high-top bar as the evening progresses.

Our take: Zuma brings undeniable global credibility and a proven format. The question is whether it will blend naturally with Gustavia's local charm or feel like an imported nightlife template.

2. Langosteria (Flamands Beach)

Opening: October 22, 2026

Following its establishment at Cheval Blanc Paris in 2021, Enrico Buonocore's Milanese brand expands to Cheval Blanc St Barts on Flamands Beach, marking its first location outside Europe.

  • The Setting: Designed by French studio Festen, positioned directly facing the ocean on Flamands Beach.
  • The Food: Its signature seafood-forward menu centered on raw preparations, pasta, and robata cooking. Key dishes include red tuna carpaccio, lobster linguine, sea bass paccheri, and black grouper chateaubriand.

Our take: The match between high-end Italian seafood and Cheval Blanc is straightforward. However, encountering the exact same dining names in St Barts as in Paris or Milan raises a fair question: does adding global brands lessen the distinctive character of the island?

3. Loulou Saint-Barts (Shell Beach / Fouquet's)

Opening: November 2026

Originally established near the Tuileries Garden in Paris and with locations in Ramatuelle and Courchevel, Loulou takes over the former Shellona site on Shell Beach under the umbrella of Group Barrière (Fouquet's St Barts).

  • The Setting: Styled to resemble a classic beachfront family estate, featuring whitewashed wood, seashell accents, and turquoise water views.
  • The Food & Concept: Generous, Mediterranean-inspired sharing plates served in a relaxed, feet-in-the-sand environment.

Our take: While the Parisian beachfront aesthetic is well suited to photos, taking over an iconic spot on Shell Beach comes with high expectations from long-time island visitors.

4. Kinugawa (Saint-Jean Bay & Gustavia Lounge)

Opening: November 2026

Kinugawa returns to St Barts with a new venue set on Saint-Jean Bay, along with its established harbor-front lounge in Gustavia.

  • The Setting: A modern pagoda design on Saint-Jean Bay surrounded by a Japanese-inspired garden, combining natural textures, light woods, and indoor-outdoor seating.
  • The Food: French-Japanese fusion cuisine featuring high-grade sashimi, signature rolls, citrus ceviches, and charcoal-grilled fish.
  • The Bar: A dedicated mixology program featuring Japanese ingredients and spirits. Highlights include the Kiyo (Margarita Blanco tequila, fresh cucumber, yuzu, wasabi) and the Festicity Fizz (gin, sake, lavender, violet).

Our take: With both Zuma and Kinugawa operating this season, high-end Japanese cuisine will be heavily represented. Execution and service quality will determine which address stands out.

5. Cream (Gustavia)

Opening: November 2026

The newest concept from Indie Group (the team behind Indie Beach, Pablo, and Cherry in Saint-Tropez, Paris, the Alps, and St Barts), Cream introduces a fresh downtown dining venue to Gustavia.

  • The Setting: A chic, contemporary space situated in the lively neighborhood around 15 Rue du Bord de Mer, sharing the immediate area with their existing hot spot, Pablo.
  • The Food & Concept: A sophisticated, gourmet menu with a tropical touch, complemented by an energetic, upscale atmosphere curated by founders Raphaël Blanc, Tobias Chaix, and Vincent Luftman.

Our take: Leveraging Indie Group's strong track record across top European destinations and St Barts, Cream is poised to quickly become a central hub for evening dining in Gustavia.
